The dollar store has "100%" acetone for like $4 usd for 375ml. Once it is open I use it for extractions and things where anhydrous acetone is less important

This might shock you but we don’t all live in america.Acetone is subject to the EU’s explosives law, category 3 if I remember right.

I can buy it by the IBC if I want, but thank you.Just saying over here things like acetone, sulphuric acid, hydrochloric are a bit more restricted than being available in walmart

I'm wondering if someone would want to clarify the relevance of the acetone grades for me.

I've seen the nail polish remover Frit Buchner is talking about, but Amazon has 100% ACS Grade Acetone (conforms to the Committee on Analytical Reagent), and I saw Analytical grade (which I guess is the most pure).

Should I care about the different grades of Acetone? Because it doesn't seem like it would matter for our purposes.

It depends on what you are doing with it.For some applications such as precipitating salts you would care about a bit of residual water but when rinsing a beaker out or making a sulphuric acid precipitation solution 1-2% wont do anything.Always assume your acetone has trace water in it, it is hygroscopic, a few pieces of drying agent or sieves will work great medium term to make sure your acetone stays dry

Also they are putting dentonium benzoate in it now, which is a bitter anticipation. Apparently to dissuade pets and children the don't say that very loud but it's on the back. Dentonium benzoate is barely soluble in acetone but just a couple parts per million will ruin the taste of anything you try to clean with it. You can use it, but you'll want to do something else after wards. Dissolve in boiling iso and precipitate, rinse with something else after.. for this reason the acs grade is preferred

Distillation from boric anhydride can yield acetone of about 18 ppm according to J. Org.

Luckily, I have an option to buy 99.9% acetone from one of EU countries. The price from shop is about 5 EUR. But if including drop and delivery fee it will be 5-10 EUR extra per 1L, depends on volume.
